A relative of the thistle, the leaves and heart of globe artichokes are edible (the hearts are delicious pickled). They’re ideal in the flower garden too, attracting bees to the flowers if left unharvested. Jerusalem artichokes which belong to the sunflower family, have a distinctive smoky flavour and are perfect roasted or added to stews and casseroles.
Artichoke ‘Imperial Star’ is an impressive cropper even in its first year, forming very large buds, for an early harvest. Artichokes are imposing plants, grown for their large edible flower buds. Hearts and leaf scales are delicious steamed and dipped in melted butter or served with roasted garlic. We recommend removing any initial flower buds after planting to allow plants to fully establish, so as to provide a good crop every summer for up to 4 years.
